It takes ten seconds: rinse the paper with hot water, let it drain through, tip the water away and then add the coffee. Steel reaches temperature quickly but it also pulls heat out of the first pour if it starts cold, and a cold start is one of the most common reasons a first cup tastes flat and sour. Rinsing the paper also removes any papery note and warms the server underneath at the same time.
