This exceptional microlot from the award-winning Vinhal Cafés Artesanais is produced in Brazil’s Cerrado Mineiro region using the Catuai 144 variety. The coffee undergoes an intricate and innovative processing method designed to elevate flavor complexity.
Ripe cherries are mechanically harvested, then washed and sorted before a 48-hour dry aerobic fermentation, followed by thermal shock. After de-pulping, the beans undergo an extended 179-hour anaerobic fermentation with water. Post-fermentation, the coffee is centrifuged and dried on raised beds for 21 days.
This meticulous process results in a vibrant and expressive cup, showcasing pronounced notes of pineapple, coconut, and juicy blackcurrant with a clean, tropical finish.
